DISTINCTION AND DELIGHT AT THE RITZ: DEAN & DELUCA Hawaii Celebrates Third Year with Renewal of Ritz-Carlton Location
(Honolulu, HI)— Away from the bustle of Kalakaua Avenue is an oasis in the form of bright and light-filled loft space on the second floor in DEAN & DELUCA at The Ritz-Carlton Residence, Waikiki Beach. Opened in September 2016, DEAN & DELUCA's first Hawaiian location now celebrates its third year in the islands. The brand seeks to solidify its reputation as curators of an epicurean lifestyle that is both inviting and distinct to the brand.
The Artisan Loft
The Artisan Loft at DEAN & DELUCA offers a level of luxury and serenity that is unique in Waikiki. The renewed space features an alluring atmosphere that is posh and welcoming. There are wood granite-top tables and comfortable chairs and wrap-around lounge seating from Europe that accent the crisp white interior. A high counter that seats four overlooks the ground floor, and a bar overlooking the action in the open-air kitchen seats five. Wall-to-wall windows offer views of the blue skies that peek through lush greenery that line Kuhio Avenue. The intimate space allows guests to dine without pretense in a casual and relaxed setting with exceptional dining service, a total of 30 seats are available.
Sommelier, Events & Catering Manager Rebecca Sinn
Rebecca Sinn has joined the DEAN & DELUCA Hawaii team the House Sommelier and events extraordinaire. She is a Sake and Wine Sommelier certified in Honolulu and New Jersey.
Sinn is focused on the experience, working in tandem with Executive Chef Kevin Carvalho on crafting a menu of food and wine pairing for The Artisan Loft as well as community events. "The Ritz-Carlton location is different—I call it our 'hidden gem'. We have a relaxing atmosphere,” she says. “Chef and I work closely on developing a food and beverage program that allows people to unwind and enjoy."
With growing brand awareness and demand, Sinn is also coordinating community involvement that includes Hawaii Food & Wine Festival, Joy of Sake, and Wine Tasting events. "I want to establish DEAN & DELUCA Hawaii as the standard for upscale catering and dining."
Executive Chef Kevin Carvalho
The charming Loft is made alluring with Executive Chef Carvalho's new menus for that compliments the wine selection. "I grew up in a family of hunters and fishermen, but I learned to cook from my great-grandmother," says Oahu-raised Carvalho. "No matter what was going on, when she cooked, everyone came together. I want my dishes to reflect that same feeling of comfort and excitement."
Since beginning his tenure in April at DEAN & DELUCA Hawaii, Chef Carvalho has worked to incorporate local ingredients in his creations. "Being able to see a product from harvest to service is what it's all about," he says. "When I'm not cooking, I'm hunting and gathering for ingredients to cook."
NEW! Brunch Menu at The Artisan Loft
Chef Carvalho translates that comfort and excitement with reimagined local and classic diner favorites in showstopping presentation and use of techniques atypical of a grandmother's kitchen. "I try to treat this kitchen as my home," says Chef Carvalho. "If my lifestyle is fishing and hunting, then my goal is to give people a culinary journey of Hawaii's land and sea. I want to do that through rare ingredients that are still local."
Each dish features recommended wine-pairing by Sommelier Rebecca Sinn. Brunch service is available by walk-ups only, but that is part of the experience. DEAN & DELUCA Hawaii President Yohei Takahashi felt that The Artisan Loft should be a less hidden gem and more in the know. "Early mornings are busy on the ground floor. We have many people coming by for coffee, a quick bite, and shopping," says Takahashi. "We encourage our guests to have a unique brunch experience with us."
Brunch at The Artisan Loft at DEAN & DELUCA is available daily from 10:00 AM – 2:00 PM. The last order is 1:45 PM, by walk-in only.

The original DEAN & DELUCA opened for business in September 1977 in SoHo, New York City through the efforts of Giorgio DeLuca--a schoolteacher turned cheese merchant--and Joel Dean, a business manager at a publisher. They dreamed of creating a place that would offer customers a sumptuous celebration of food and a venue to experience all of the pleasures that cooking, and eating can bring.
